Food Fest: Fishy Favourites

SCOTLAND is known for its fine, fresh fish and seafood. Foodies at the Festival will give visitors the chance to purchase a selection of delights from Scottish waters.
SEAFOOD SHACK, www.dakotahotels.co.uk Seafood specialist DR Collins is teaming up with Dakota Hotel, (Restaurant of the Year and Hotel Restaurant of the Year 2008), to launch the Seafood Shack at Foodies at the Festival. Watch the e
xperts demonstrate seafood preparation, such as shucking oysters, then sample some of the delights on offer, including prawn and sweet oyster salad.

DELFOUR HATCHERY, www.scottishbrowntrout.co.uk Scotland's native brown trout are rare and only farmed in very small numbers due to their wild and slow-growing nature. Take the opportunity to purchase Delfour Hatchery's Organic smoked brown trout and brown trout pate at Foodies. At the family-run Hatchery at the base of the Monadhliath Mountains in the Cairngorms National Park, the fish is grown to the highest welfare standards, then hand-selected and smoked using traditional methods to give it the delicious and healthy taste of the Highlands.

ARBROATH SMOKIES, www.arbroathsmokies.net Iain Spink's Arbroath Smokies are made using the traditional methods of the fisherwives of the 1800s. Iain is directly descended from the Scandinavian fisherfolk who populated the fishing village of Auchmithie, north of Arbroath.

SEAFOOD TRAIL, www.theseafoodtrail.com The Seafood Trail, created for seafood lovers, maps a route though south-west Scotland, showcasing the best waterfront establishments serving the finest seafood and shellfish.
